It's true that practicing on one person won't teach you how others react. Still, it's good for running through hypotheticals without actual risk. Some people can learn from being thrown into the thick of it, but it doesn't work for everyone. And you can always work your way back up.
That makes a certain amount of sense, although that would mean I'd have to find someone I'm comfortable with that's also willing to let me practice on them...
