I don't know if I would classify most of Junkrat's injuries as 'unexplainable'.

the ones that aren't burns. or breaking his bleedin peg from falling too far.

Even so, I feel as though him being Junkrat automatically explains the injuries he gets. Attracting, or getting into... or causing, trouble seems to be his natural disposition. But you know him better than me.
